This home-made version of vegetable pizzas has been adapted so that it can be served as a healthy snack and can be prepared with easily available ingredients. Left over bread and vegetables can be used. The dish can be prepared even if you do not have an oven.

Prepare the bread, vegetables and herbs as indicated in the ingredient list.

Smear bread slices/ ‘pain maison’ halves with olive oil.

Heat the pan on medium heat. Toast the bread slightly on one side. Turn off the heat.

Turn over the bread slices and smear/spread the tomato sauce.

Add the vegetables in layers. Sprinkle over cheese and herbs.

Turn on the heat and toast on low medium heat, with pan covered. Toast until cheese melts.
